Do you like Tofu?
Are you familiar with Okara?
Okara is an edible one like the residue leftover from the production of Tofu.
Most of them are now abandoned or being food for animals, but I want to think about how to use them more effectively.

Right now I'm making Miso using it, but I'd like to think more about how to use it effectively. This is because insoluble dietary fibre, protein, and soy isoflavones remain.
Rich in nutrients and having a dietary component, it is suitable for vegetarians and vegans to consume vegetable protein.
I would like to try to make veggie meat using soybeans.

I run a company called Okara R&D Laboratory.
