Former Executive Chef of Studio at Freehand Hotel / George Washington Bar in NYC.
I last ran the all-day menu at Freehand NYC’s Studio restaurant, featuring Mediterranean cuisine with a big Moroccan streak, showcasing bold spices and vegetables.
Born on the island of Trinidad & Tobago, I was immersed in a vibrant cuisine and culture. At the age of six, as far back as I can remember, I was shelling peas, cleaning chickens and ducks with my grandmother on out little family farm.
I’ve cooked for the likes of Drake, Tom Brady, Alicia Keys, Tiger Woods and Bill Gates while helming the VIP kitchens for the Masters Golf Tournament and the 2006 Soccer World Cup in Munich Germany.
While I continued to trained with the greats in French/Italian culinary traditions and fine dining techniques, as a chef my palate are still very rooted in the melting pot of the Caribbean. That’s why I handles flavors and spices with such flair and nuance. How can you say no to a 'brown stew'—that is, oxtail cooked in caramel, achieving that sweet deep umami?
