— 紅燒牛肉麵 —

食譜為 4 人份,總製備時間 40 or 90 分鐘

備料:乾麵條 (我用的是刀削麵)、牛肉 (一定要帶油花的牛腱或 Costco Short Ribs)、青江菜 (建議用小的 Baby Bok Choy)、米酒、醬油、洋蔥、蔥、番茄、辣豆瓣醬、橄欖油 、辣椒、冰糖、黑胡椒。

1) 將蔥、辣椒、洋蔥、番茄切塊,加入少許橄欖油翻炒至金黃帶紅色即可關小火。(建議各 2 根 or 顆)

2) 將牛肉切塊,若使用 LA Style 的 Short Ribs 建議把最下面那排骨頭分開條狀煮湯用。(建議 2 磅)

3) 加入切好的牛肉、3 杯水、1 杯醬油、1.5 杯米酒,將火調大;隨後加入 1 匙冰糖、1 匙黑胡椒、3 大匙辣豆瓣醬持續攪拌。

4) 湯煮到大滾之後停止攪拌,轉小火燉煮 30 or 75 分鐘。如果為一般鍋,在小火煮 60 分鐘後即可關火;此時可以做自己的事!
* 30 分鐘為壓力鍋時間,否則建議 60 分鐘起跳 *

5) 在計時完之前的 10 分鐘,將麵加入水中煮 5-7 分鐘後撈起丟入牛肉湯中 (如果要隔餐則請分開保留),隨後將青江菜放入同一鍋水中燙。

6) 把牛肉湯、麵、青菜裝至同一個碗中即完成!
