Eric Huang is a musician turned chef turned fried chicken impresario. After spending a stereotypical Asian American childhood growing up in a Chinese restaurant and grinding away at classical music, Eric would ultimately be expelled from The Juilliard School after studying the cello there for many years. This led him to Northwestern University but Eric wound up back in a restaurant as a chef because he was a bad student. He has spent the last ten years working in New York City fine dining with his most recent position as a Sous Chef at Eleven Madison Park. When the pandemic struck he started making fried chicken meals out of his family's shuttered restaurant. This has become far more successful than anyone ever thought it would be and has been a profound moment of reflection as he pivots away from haute cuisine.
