Some of what drives me (pondering the future of food)
1. Vibrant restaurant communities build vibrant communities. We all benefit when restaurants are vibrant and profitable as restaurants offer employment opportunities for many (from entry level to ownership).
2. There is a cost to cheap food - when food is too cheap it leads to food waste, drives down wages, and impacts food insecurity. We can all work together to address these issues.
3. We need to change the way we manage the food supply chain in order to feed a growing global middle class. Focus on a diverse protein supply chain will be key.
Retailers, manufacturers, growers/ distributors, foodservice operators all have a stake in these discussions and need to lead meaningful change.
