Edwin is the founder and owner of Ita’s Flavor: a catering business based in Richmond, va, Edwin is known for his creativity and ability to elevate traditional authentic west indie and central America ingredients with stellar technique and style.
Edwin is a second-generation Panamanian, Jamaican, and Barbadian born in Panama, Panama City who was raised by a hardworking West Indie mother. Edwin was deeply influenced by Panamanian and west indie cuisine of which his mother and aunts embodied.
Edwin pursue a career in Culinary Art and Hospitality. He started his studies at Stratford University where he pursued his degree in Advanced Culinary Arts & Baking and Pastry Arts who also working on his BA in Hospitality Management. Chef Edwin is also a 21-year Army Veterans.
